Pork Lo Mein

Ingredients and Preparation
|Lo mein noodles (or whole wheat linguini)||4 ounces|
|Canola oil||2 teaspoons|
|Garlic, minced||2 cloves|
|Boneless lean pork chops, sliced into 1/2” shreds||½ pound|
|Broccoli flowerets||½ cup|
|Small red bell pepper, sliced into ¼” strips||1|
|Mushrooms, sliced||½ cup|
|Low-sodium soy sauce||2 tablespoons|
- Cook noodles according to package directions, omitting salt and fat. Drain and set aside.
- Heat oil in a medium skillet or wok over medium-high heat. Add garlic cloves and cook for 1-2 minutes, until garlic is tender. Stir in pork and cook 2-3 minutes, until it begins to brown. Stir in broccoli, pepper, mushrooms, and scallions, and continue cooking for 6-8 minutes, until vegetables are tender and pork is cooked through.
- Turn off heat, add soy sauce, and toss with noodles. Serve immediately.
